A biscuit recipe that will keep it's shape

This homemade biscuit recipe is easy, quick and really tasty! The addition of cornflour helps the biscuits to keep their shape. It covers a variety of areas from the EYFS - Communication and language, Physical development, Personal, social and emotional development, Literacy, Mathematics, Understanding the world & Expressive arts and design

 

 

Ingredients

  • 100g unsalted butter, softened at room temperature

  • 100g caster sugar

  • 1 medium egg, lightly beaten

  • 265g plain flour

  • 10g cornflour

  • 1 tsp vanilla extract

 

 

Method

  1. Preheat the oven to 190C. 

  2. Cream the sugar and butter together.

  3. Add in the egg & vanilla extract, a little at a time.

  4. Stir in the flour and cornflour until the mixture starts to form into a more solid dough consistency.

  5. Dust your worktop with flour and then roll out the dough to around 1cm/1.5cm thick.

  6. Cut the dough with your biscuit cutters. I use parchment paper to line my baking sheet to ensure that the biscuits don't stick to the pan.

  7. Bake your biscuits for around 10-12 minutes or until they are a light golden colour. Lift them gently off the baking sheet and allow them to rest on a wire rack for 10-15 minutes. 

  8. If you then want to ice your biscuits, mix together some icing sugar, water & food flavouring. Decorate with biscuit decorations (widely available in any supermarket/online)
